This spicy Sardog is the ultimate summer weekend recipe, made with Fishwife Hot Pepper Sardines, spicy sardine oil mayo, buttery roasted potatoes, and a grilled bun. The sardine oil gets used throughout the entire recipe, from the mayo to the potatoes to grilling the bun, so not a drop goes to waste. It’s spicy, savory, buttery, and a little bit unconventional—the perfect upgrade for your next summer cookout. This recipe makes one Sardog, but it’s easy to multiply for a crowd!

Sardines with Hot Pepper (3-Pack)

Ingredients

  • 1 tin Fishwife Hot Pepper Sardines
  • 1 hot dog bun
  • 1–2 tbsp mayonnaise
  • 1 tbsp Hot Pepper Sardine oil, plus more as needed
  • 1 Hot Pepper Sardine pepper, from the tin
  • 3–4 baby potatoes
  • 1 tsp butter
  • 1-2 Hot Pepper Sardine peppers, finely chopped
  • Salt, to taste

Directions

  1. Roast the potatoes. Preheat oven to 425°F. Halve the baby potatoes and toss with butter, chopped Hot Pepper Sardine pepper, and a pinch of salt. Roast for 20–25 minutes, until golden and tender.
  2. Make the spicy mayo. Mix the mayonnaise with a spoonful of Hot Pepper Sardine oil until smooth and spicy.
  3. Grill the bun. Brush the inside of the bun with Hot Pepper Sardine oil and grill until golden and crisp.
  4. Build your Sardog. Nestle the entire tin of Hot Pepper Sardines into the grilled bun. Top with the spicy mayo and serve with the spicy butter potatoes.
  5. Enjoy immediately. And congratulate yourself on finding a use for every last drop of that spicy sardine oil.
